Okay, this is going to blow your mind. 4 ingredients, that’s it.
1 large Avocado (for the record, I love avocados)
1 package of Linguine
1 cup of rice milk (I use rice milk because it doesn’t really taste of anything)
Nutritional yeast if you have it.
Cook the pasta according to the directions on the package.
Scoop out your ripe avocado into a saucepan and mash it, adding the milk until the sauce is the consistency you like. I use my immersion blender for this. Heat it up the sauce. Add garlic salt to taste.
When the pasta is cooked and drained, pour the sauce over it and mix. Sprinkle with nutritional yeast for that added nutty, cheesy taste. “Boom!” It’s so stinkin’ simple to make! This is probably one of our favorite quick meals.
