Vegan Creamy Chick-Avo Sandwich

I love sandwiches. Especially good sandwiches on seedy bread. Here is a quick recipe for a sandwich that has all of the creaminess of avocado and all the protein goodness of chickpeas.

2 avocados, remove the pit
1 can of chickpeas, drained and rinsed well
1/2 lemon
sprinkle of garlic powder
sea salt & fresh cracked pepper
thinly sliced red onion
thinly sliced tomato
lettuce
sprouts
bread

This is definitely not rocket science. Pulse the chickpeas together with the avocados in your food processor (or smash it together in a bowl) until it is like guacamole. Squeeze in the half of lemon and sprinkle in the garlic powder to taste.

Lay out the bread of your choice. Spread the filling on one side of your bread, crack some salt and pepper over it. Layer up the red onion, tomato, lettuce, and sprouts on your sandwich. Enjoy!

This makes enough for about 4 sandwiches.
