Elegant Vegan Avocado & Grapefruit Salad

This elegant salad is so embarrassingly easy it hardly deserves a whole page. It is a delicious way to “wow” that special someone, even if you don’t know how to cook. Fellas take note! The avocado is so creamy, and the citrus gives it a burst of freshness.


1 Avocado
1 Grapefruit (or you can use a blood orange)


Slice the avocado in half using a sharp knife. Cut through the avocado lengthwise until you feel the knife hit the pit. Remove the pit by whacking the sharp end of the blade on the pit until it sticks and then twist the pit out. Slice the avocado lengthwise and remove from the skin.
Slice off the grapefruit peel, cutting from the top to the bottom, following the curve of the fruit. Remove as much of the pith as you can, without sacrificing the flesh of the fruit.

Here are two easy vegan dressings to enjoy with this salad.


Vegan Vinegarette

1 small shallot, peeled and finely minced.
1/4 c champagne vinegar
1/4 c freshly squeezed orange juice
Zest of 1 orange
1 TBS Bee Free Honee
1/4 – 1/2 c extra-virgin olive oil
Salt & freshly cracked pepper, to taste
