Need a quick dish to throw together. Here is a super easy veggie bake with a Tex-Mex flair. It’s so good! It can be served as a side dish, a main dish or even a vegan taco or burrito filling alternative.
1 can of Rotel tomatoes
1 can white hominy, rinsed and drained
1 can of black beans, rinsed and drained
2 cans of sweet corn, drained
1 diced red sweet pepper
1/4 C nutritional yeast (or Monterey Jack if you are a vegetarian)
Combine everything but the nutritional yeast and avocado in a baking dish. Cover and bake at 350° for 25 minutes. When everything is hot and bubbly. Uncover and sprinkle with nutritional yeast. The nutritional yeast adds that cheesy flavor you crave with Tex-Mex kind of dishes. Top with diced avocado.
Serve it with chips and salsa or a side salad.
Taking it to the Next Level
If you want to take this dish to the next level, spoon on to tortillas, using a slotted spoon. Add vegan sour cream and diced avocado. It is a delicious alternative to traditional burritos or tacos!
