Vegan Mediterranean Pasta

For a quick delicious dinner, try this vegan Mediterranean pasta dish. It takes about 15 minutes to make and serves 4. If you are not a vegan you are welcome to finish the dish with some crumbled feta.


1 box of penne pasta
1 large can of diced tomatoes (with garlic, basil, and oregano)
1 can of chickpeas, rinsed and drained
1 zucchini, diced (medium to large)
1 can of black olives, roughly chopped


  1. Cook the pasta according to the directions on the box.
  2. In a skillet cook the zucchini until tender, add the tomatoes and chickpeas. Cook everything until it is heated through.
  3. Drain the pasta and add it to the skillet, stir until incorporated. Toss in the olives at the last minute.
  4. Drizzle lightly with olive oil. Salt and pepper to taste.
