Vegan “Pulled Pork”

Pulled bbq carrots are the vegan’s answer to pulled pork. They’re so savory, delicious, and easy! Plus they are healthy! You can’t go wrong with these 6 ingredients.

Ingredients

5 Carrots, large
3 cloves Garlic
1 tsp Onion powder
1 Red onion, large
BBQ sauce (your favorite vegan)
Buns

Instructions

Shred five large carrots.
Slice a large red onion thinly.
Toss lightly in olive oil and caramelize them in an electric skillet.
Add the onion powder and garlic.
Once the carrots and onions are tender and caramelized, add a cup of barbecue sauce and simmer for ten minutes.
Pile on buns and serve with a side salad.
Try adding a grilled pineapple ring on top.
