‘Tis the season for all things pumpkin spice. Just because you are a vegan doesn’t mean you can’t enjoy some pumpkin spice of your own. Here is a pumpkin spice ice cream that is delicious, easy to make and full of flavor. There is nothing like the flavors of the holiday season!
1/2 Cup Full Fat Coconut Milk
11.25 ounces of sweetened condensed coconut milk
15 ounces pumpkin puree
3/4 tsp pumpkin pie spice
pinch of salt
1/4 c chopped pecans
This ridiculously easy recipe is as simple as blending all the ingredients and freezing it. I use an immersion blender, but you can use your regular blender. Chill for an hour. You’ll have to thaw a little if you leave it in the freezer for more than an hour as it freezes hard.
