This delicious creamy artichoke spinach pasta is easy to make and a hit any day of the week. Add a salad and a fresh loaf of vegan bread. It’s a simple meal to impress any of your vegan or non-vegan friends!
2- 13 oz cans artichoke hearts (drained, rinsed, and chopped)
8 oz box of frozen spinach
2 tbsp minced garlic
2 tsp garlic powder
2 tbsp non-dairy margarine
8 oz vegan cream cheese
1- 16 oz box of dry linguine
salt & pepper
1/2 cup reserved pasta water
Bring a large pot of water to a boil. Add pasta and cook according to the instructions. Reserve 1/2 cup of pasta water before draining.
While pasta is cooking, melt butter in a pan over medium heat. Add garlic and sauté for few seconds. Add artichokes, spinach, cream cheese & garlic powder and stir to combine.
Add cooked pasta to the pan and toss (adding pasta water as needed to loosen up the sauce).
Salt and pepper to taste.
Top with fresh basil or nutritional yeast if you want. Serves 5.
