1 C dry quinoa (cooked according to the directions on the package)
1 bag spinach (8 oz) (roughly chopped)
1/4 C red onion, thinly sliced
1 can Mandarin oranges
1 C blueberries
1 C blackberries
1/2 C pecans, chopped
- Cook quinoa according to the package directions and set aside to cool.
- Salad: In a large bowl, place the spinach and add the remaining ingredients, including the cooked quinoa. Toss until well combined.
- Dress the salad and toss.
We have eaten this salad when the quinoa was still warm and we have eaten in after it’s been chilled for a couple hours. Either are great options.
Dress the salad with your favorite fruit vinaigrette. Try raspberry, lemon or orange. We love the orange.
