Vegan Jambalaya

This vegan jambalaya is super easy to make and so delicious!


1 onion, chopped
3 tsp of minced garlic
1 red bell pepper, diced
2 stalks of celery, diced
2 green onions, chopped
1/2 cup fresh parsley, chopped
2 vegan andouille sausages, roughly chopped
3 cups cooked rice
1 can (14 oz) crushed tomatoes 
3 tsp Italian seasoning
1 tsp Cajun seasoning
1 tsp smoked paprika
hot sauces, salt & cayenne pepper, to taste


  1. In a large pot, sauté the red onion for about 2-3 minutes in oil. Add the garlic and cook for another minute. Add the bell pepper, celery, and the vegan sausage. Cook for another 3-4 minutes.
  2. Stir in cooked rice, crushed tomatoes, and spices. Cook for about 3 minutes.
  3. Season with hot sauce, salt and cayenne pepper. Stir in the green onions and the chopped parsley.

Serves 4
